Happy Easter!

Happy Easter! This past Sunday was a fun filled day with lots of eating and drinking to celebrate this wonderful holiday! And of course it would not be complete without a fabulous dessert! I was a bit rushed, but think it came out pretty darn good! Under that cute little carrot was a creamy homemade cream cheese frosting and carrot cake! Delish! Hope you like the pics as much as I like stuffing my face with the cake!

Cooking Light-- Shrimp Cobb Salad and Lemon Cream Pie!

About a year ago I told myself that after getting Cooking Light Magazine for the last several years, it was time for me to start making something from each issue...it took some time, but I am getting better and lasts night meal reminded me why I should really use these recipes more often.
Last night I made a killer Shrimp Cobb Salad that was light, yet FULL of flavor. It was loaded with fresh tomatoes, avocado, bacon, whole kernel corn and shrimp. The dressing was tangy and just right to coat the salad.

For Dessert I made a Lemon Pie, also from cooking light. I love lemon and the flavor of this pie was really yummy! I did buy a store bought crust and could have maybe rolled it out a bit better, as it baked very uneven in the dish, but the final result was really good. I decided not to add the cream to the pie, but rather add it as each piece was sliced.

Birthday Strawberry Cake for Jenny...

A few weeks ago my very dear friend celebrated her birthday! As you already know I love birthday's so what better way to celebrate than to make her a cake that I was dying to try out;) I had yet to make a cake with fresh fruit, so here was my chance! I used the Pillsbury Vanilla Cake Mix and then made from scratch a fabulous, creamy and delish cream cheese frosting! Check out the final results! It turned out amazing and the fresh fruit really lightened it up!

Great Finds...

So this past weekend I was reading the April issue of InStyle Magazine. Towards the back I found some great little tips and trends and wanted to share!

For those of you who are on the go or are always in heels, or maybe just like to have all the essentials in your purse in case of emergencies, check these out! I went online this morning and think I am going to order a pair! http://www.footzyrolls.com/

Also thought these little buttons were kind of cute...I always seem to never have a safety pin handy when trying to get rid of that extra cleavage ;) hee hee http://www.bosombutton.com/

So out of that page of gadgets, I thought those were two were sharing!

Enjoy!
Oh and I am off to St. Thomas with my boyfriend this week! A much needed get away, that is for sure! So when I am back I will have lots of pics to share!
Til next time- M
